What Dutch Processing Is

Dutch processing — also called “Dutching” — is a method of treating cocoa beans or cocoa powder with an alkalizing agent (typically potassium carbonate) during manufacturing. The process was developed in the early 19th century by Dutch chemist Coenraad Johannes van Houten, which is why it carries the “Dutch” name.

The alkalizing treatment raises the pH of the cocoa from its naturally acidic state (pH around 5–6) to a more neutral or slightly alkaline range (pH 7–8). This single change has several downstream effects on the cocoa’s characteristics.
